Golden Rainbow Quinoa
As we’ve touched on before, eating the rainbow comes with an array of health benefits. Quinoa is high in plant-based protein and contains all the essential amino acids. Turmeric is a sacred root with incredible health benefits and taste, not to mention it has a beautiful golden colour.
2.25 Cups Cooked Red and White Quinoa
1 Yellow Onion
2 Baby Zucchinis
Bring 1½ Cups of water to boil in a saucepan.
Add ¾ Cup of raw quinoa and reduce to a simmer for approximately 15 minutes.
Dice the vegetables.
Heat some rapeseed oil in a frying pan.
Sauté the vegetables until soft.
Meanwhile, prepare the dressing.
Drain the quinoa and combine with the sautéed vegetables.
Mix with the turmeric dressing and toss to combine.
