Golden Rainbow Quinoa

As we’ve touched on before, eating the rainbow comes with an array of health benefits. Quinoa is high in plant-based protein and contains all the essential amino acids. Turmeric is a sacred root with incredible health benefits and taste, not to mention it has a beautiful golden colour.

Serves 4


  • 2.25 Cups Cooked Red and White Quinoa

  • 1 Yellow Onion

  • 2 Carrots

  • 2 Baby Zucchinis

  • 3 Tomatoes

  • Rapeseed Oil

  • Turmeric Dressing


  1. Bring 1½ Cups of water to boil in a saucepan.

  2. Add ¾ Cup of raw quinoa and reduce to a simmer for approximately 15 minutes.

  3. Dice the vegetables.

  4. Heat some rapeseed oil in a frying pan.

  5. Sauté the vegetables until soft.

  6. Meanwhile, prepare the dressing.

  7. Drain the quinoa and combine with the sautéed vegetables.

  8. Mix with the turmeric dressing and toss to combine.
