Rainbow Stew

Eating a colourful diet is recommended to boost the immune system. It just so happens that phytonutrients found in colourful vegetables provide us with all sorts of vitamins, minerals and antioxidants. With this recipe, we’ve created a stew with all the colours of the rainbow!

Serves 2


  • 1 Yellow Onion (White)

  • 1 Carrot (Orange)

  • 2 Medium Potatoes (Yellow)

  • 1 Can of Coconut Milk

  • 1 Can of Kidney Beans (Purple)

  • 1 Can of Crushed Tomatoes (Red)

  • Handful of Fresh Spinach (Green)

  • Seasoning: Cayenne, Coriander, Cumin, Oregano, Paprika, Salt and Pepper


  1. Heat some cooking oil in a cast iron pan.

  2. Finely chop the onion and soften on the stove.

  3. Dice the potatoes and carrots and add them to the pan.

  4. Season with spices and fry until golden.

  5. Pour the coconut milk over the vegetables and allow to soften for a few minutes.

  6. Add the kidney beans and crushed tomatoes to the stew.

  7. Finally, stir in the fresh spinach shortly before serving.
