Roasted Root Vegetables
Root vegetables grow underground and absorb a great amount of nutrients from the soil. Therefore it’s important to buy organic, especially when leaving the skin on. Parsnips, carrots, and parsley are all in the same family and packed with important nutrients. Sweet potatoes are anti-inflammatory and remarkably high in Vitamin A.
Seasoning: Rosemary, Thyme, Salt and Pepper
Preheat the oven to 175ºC (350ºF).
Finely chop all the vegetables and spread them out on an oven tray.
Drizzle with melted coconut oil, season, and toss to coat.
Roast for 20 minutes in the middle of the oven.
Stir and roast for another 20 minutes.
Remove and top with fresh parsley.
