Swedes are rich in vitamin C, minerals, and dietary fibre. Often overlooked, this versatile root vegetable makes for a tasty side dish. Accompanied with fresh ginger and a drizzle of honey this dish provides an interesting array of flavours.

INGREDIENTS

  • Swede
  • Fresh Ginger
  • Honey
  • Olive Oil
  • Salt

INSTRUCTIONS

  1. Preheat the oven to 200ºC (400 Fahrenheit).
  2. Peel the swede and chop into large chunks.
  3. Peel the fresh ginger and cut into pieces.
  4. Add to a small oven tray and drizzle with olive oil and honey.
  5. Sprinkle with salt.
  6. Roast for 10 minutes.
