Coconut Basil Pesto
Healthy allergy friendly vegan pesto suitable for those with a nut allergy. Eat as a sauce, salad dressing, or stir a spoonful into a bowl of soup. Mix your ingredients in a food processor and you've got homemade AIP pesto in a matter of seconds!
- 2 Cups Fresh Basil
- 1 Cup Coconut Flakes
- 1 tsp Lemon Juice
- 3 tbsp Coconut Oil
- Add basil, coconut flakes, lemon juice, and salt to food processor and pulse until combined.
- Slowly pour the melted coconut oil into the mixer.
- Mix until you achieve a creamy texture.
