Quinoa Salad
Quinoa is loaded with vital nutrients, packed with fibre, and happens to be naturally gluten free. It’s also an excellent vegan protein source given that it contains all the essential amino acids. This refreshing quinoa salad is quick to throw together and makes for a perfect light summer side that goes especially well with homemade falafel.
Serves 6
INGREDIENTS
1 Cup Mixed Quinoa
1 Red Onion
2 Large Tomatoes
1 Cucumber
Fresh Parsley
2 Limes
Olive Oil
Salt and Pepper
INSTRUCTIONS
Rinse the quinoa using a fine mesh strainer.
Combine with 2 cups of water in a saucepan and bring to a boil with the lid on.
Uncover and simmer until all the water has cooked out.
Remove from the heat, drizzle with olive oil, and fluff with a fork.
Chop the vegetables into small pieces.
Combine with the quinoa.
Loosely chop the fresh parsley and mix into the salad.
Squeeze limes over the top.
Drizzle with olive oil and season with salt and pepper.
Toss to combine.
