Green Pea Salad
Green peas are packed with health benefits, and the crop itself is great for the environment. We prefer to use frozen peas as they are often sweeter and crispier than fresh peas. This recipe truly could not be simpler and makes a great side dish on a hot day. We chose to use red pepper because the colour complements the green so nicely, but go ahead and substitute this for any fresh vegetables you have on hand.
1 Package Frozen Peas
1 Red Pepper
½ Red Onion
5 tbsp Vegan Mayonnaise
Place the frozen peas in a colander and run under cool water until thawed.
Chop the onion och pepper into small pieces.
Toss with the green peas before adding a few spoonfuls of vegan mayo.
Lightly sprinkle with salt and pepper.
