Cucumber Pomegranate Salad
Cucumbers contain most of the vitamins you need on a daily basis, including Vitamin B, Vitamin C, Calcium, Iron, and Zinc. They also serve as an outstanding hangover cure! Pomegranates are anti-inflammatory and a known aphrodisiac. Toss the two together and you've got yourself a light and refreshing summer salad.
Serves 8
INGREDIENTS
2 Cucumbers
1 Pomegranate
Fresh Chives
Fresh Coriander
1 Lemon
2 tbsp Olive Oil
Salt
INSTRUCTIONS
Finely chop the cucumbers into thin rounds and place on a serving dish.
Slice the pomegranate in half.
Hold the pomegranate in the palm of your hand over a bowl.
Use a wooden spoon to whack the shell and allow the seeds to drop into the bowl.
Throw a handful of seeds onto the cucumbers.
Juice the lemon into a small bowl.
Add the olive oil and combine to make a dressing.
Pour over the salad and toss to combine.
Season with salt and throw in some chives and fresh coriander.
