Shaved Brussels Sprout Salad
This tangy salad makes a great side and takes mere minutes to prepare. Brussels sprouts are super high in nutrients and antioxidants. They also happen to be one of the best plant sources of omega-3 fatty acids.
3 Cups Brussels Sprouts
2 tbsp Olive Oil
2 tbsp Apple Cider Vinegar
1 tbsp Maple Syrup
1 tbsp Dijon Mustard
Salt and Pepper
Either by hand or using the slicing attachment on your food processor, cut the sprouts into thin slices.
Core the apple and grate into pieces.
In a small jar, mix the remaining ingredients into a dressing.
Transfer the Brussels sprouts and apple to a large bowl and toss with the dressing to combine.
