Aquafaba Swedish Pancakes
Our favourite lazy Sunday breakfast, and another fabulous use for aquafaba. These crêpes are vegan, gluten free, and absolutely delicious! All you need are a few simple ingredients and your toppings of choice. We tend to opt for a berry compote or cinnamon and sugar to satisfy that sweet tooth.
1 Cup Aquafaba
0.75 Cup Rice Flour
0.25 Cup Tapioca Flour
0.25 Cup Vegan Milk
Pour aquafaba into a large bowl and whisk to aerate.
Add the rice and tapioca flour, whisking to combine.
Introduce the milk a little at a time until your desired consistency is reached.
Sprinkle a pinch of salt into the mixture.
Heat some cooking oil in a frying pan over medium heat.
Use a ladle to pour a spoonful of batter into the middle of the pan.
Quickly pick up the pan and swirl the mixture around to spread evenly.
Cook until the edges begin to curl.
Flip and fry on the other side until golden.
Remove from heat source and serve with your favourite toppings.
