Shaved Fennel and Parmesan Salad
Easy, healthy, and delicious salad which makes the perfect pairing with a fish or meat dish. To make this salad vegetarian, simply replace the Parmesan with a vegetarian cheese of your choice. Alternatively, remove it entirely for a vegan option!
Serves 4
INGREDIENTS
- Arugula
- Fennel Bulb
- Fresh Dill
- 2 tbsp Olive Oil
- Parmesan
- 1 Lemon
- Salt
- Pepper
INSTRUCTIONS
- Thinly slice the fennel bulb
- Combine the arugula, fresh dill, and shaved fennel in a serving bowl
- Grate 1 teaspoon of lemon zest
- Squeeze the lemon into a small bowl
- Combine lemon juice, zest, salt, and pepper
- Pour the dressing over the salad and toss to combine
- Shave a few slices of Parmesan on top of the salad
