Coconut Basil Pesto
Healthy allergy friendly vegan pesto suitable for those with a nut allergy. Eat as a sauce, salad dressing, or stir a spoonful into a bowl of soup. Mix your ingredients in a food processor and you've got homemade AIP pesto in a matter of seconds!
Yield 16oz Mason Jar
INGREDIENTS
2 Cups Fresh Basil
1 Cup Coconut Flakes
1 tsp Lemon Juice
3 tbsp Coconut Oil
Salt
INSTRUCTIONS
Add basil, coconut flakes, lemon juice, and salt to food processor and pulse until combined.
Slowly pour the melted coconut oil into the mixer.
Mix until you achieve a creamy texture.
