  • 6 Medium Organic Potatoes

  • 1 Cup Vegan Mayonnaise

  • Fresh Chives

  • Salt and Pepper


  1. Fill a saucepan with water and bring to a boil.

  2. Rinse and scrub the potatoes before adding to the pot.

  3. Reduce to a simmer, and sprinkle with a generous amount of salt.

  4. Cook for approximately 20 minutes until the potatoes can be pierced with a fork.

  5. Meanwhile, use scissors to cut the chives into small pieces.

  6. Drain the potatoes and transfer to a large bowl.

  7. Use a fork to mash the warm potatoes.

  8. Combine with vegan mayonnaise and chives.

  9. Season with salt and pepper to taste.
