Living gluten-free often means foregoing those freshly baked bread rolls brought out prior to restaurant meals. These vegan bread rolls happen to be free from all top allergens and require very few ingredients. We recommend eating them warm from the oven with a layer of tangy marmalade.
4 Bread Rolls
1 Flax Egg (1 tbsp Flax Meal + 2½ tbsp Water)
½ Cup Coconut Flour
2 tbsp Psyllium Husk
½ tsp Baking Powder
2 tbsp Coconut Oil
1 Cup Boiling Water
Preheat the oven to 160ºC (320 Fahrenheit).
Make the flax egg and set aside allowing it to thicken.
Mix together all the dry ingredients.
Melt the coconut oil and stir it in.
Add your flax egg to the mixture.
After boiling the water, add a little at a time while working the ingredients into a dough.
Divide into four pieces and roll into balls.
Place the bread rolls on a baking tray.
Bake for 20 minutes in the middle of the oven.
Flip over and bake for another 20 minutes.
Remove and allow to cool before serving.
