Banana Mini Muffins

We all know the feeling of buying a bunch of bananas and failing to eat them all before they ripen to the point of no return. Enter banana mini muffins, the perfect snack to bake yourself in the afternoon using those overripe bananas. I like to make my own Almond Meal and Oat Flour for this recipe by simply grinding the nuts and oats into a powder in my blender.

24 Mini Muffins

INGREDIENTS

  • 2 Flax Eggs (2tbsp Flax Meal + 5 tbsp Water)

  • 2 Ripe Bananas

  • 3 tbsp Coconut Milk

  • 3 tbsp Liquid Sweetener (I tend to opt for Agave or Maple Syrup)

  • 1 tsp Vanilla Extract

  • 1 tsp Baking Powder

  • 1 Cup Almond Meal

  • ½ Cup Oat Flour

  • Cinnamon

INSTRUCTIONS

  1. Preheat oven to 350ºF (175ºC).

  2. Prepare flax eggs and set aside allowing to thicken.

  3. Mash bananas in a bowl.

  4. Add all ingredients in the listed order, stirring to combine.

  5. Grease a mini muffin tray and fill each cup with mixture.

  6. Bake for 25 minutes until golden and a stick test comes out clean.

  7. Let rest for 5 minutes before popping out and cooling on a rack.
