Tomato Omelette

Cooking an omelette could not be simpler! Whether you're rushing to work in the morning, at home on a lazy Sunday, or backcountry camping, whisking some eggs together in a pan is all it takes for a nutritious meal.

Serves 1

INGREDIENTS

  • 2 Eggs
  • Cherry Tomatoes
  • 1 tbsp Olive Oil
  • Salt
  • Pepper

INSTRUCTIONS

  1. Cut cherry tomatoes into quarters.
  2. Whisk the eggs in a small bowl and season with salt and pepper.
  3. Heat a frying pan with olive oil and pour in the eggs. 
  4. Cook for a few minutes, then add the cherry tomatoes to half the omelette before folding over. 
  5. Serve with mixed greens.
