Jackfruit
Below is a step-by-step guide to preparing a jackfruit. This magical fruit looks quite intimidating on the outside, but once you crack it open and get at the juicy interior you’ll be super pleased to have embarked on this adventure. To check if your jackfruit it perfectly ripe, press gently into the knobbly skin and see if you’re able to leave minor indents. The options for what to do with your jackfruit are truly endless. The sweet fruit pods can be eaten raw or cooked down into a marmalade, while the seeds can be roasted just like chestnuts. If you work with an unripe jackfruit, however, the flesh can be cooked into a savoury meat substitute.
INSTRUCTIONS
Grab a large kitchen knife and brush with coconut oil.
Cut the jackfruit lengthwise all the way around and through (imagine you’re slicing an enormous avocado).
Coat your hands in coconut oil (this will save you from getting covered with a sticky layer of latex) and break apart the fruit right down the middle.
Start by removing the yellow fruit pods and popping out the seeds into a separate bowl.
Continue separating fruit from seed until the entire jackfruit has been dug out and you’re just left with the fibrous flesh.
